What do edging trims actually do?
They protect a cut edge and close a gap.

What material lasts best?
Harder materials, because floor-level trims take concentrated abuse.
Aluminium is the common general-purpose choice.
Stainless suits wet, hygienic and heavy-traffic areas.
Brass suits appearance-led work with moderate traffic.
PVC trims are cheap and damage easily.
In commercial entrances the harder option repays itself within a couple of years.
Do they need to match the flooring?
Matching is usual but contrast is sometimes required.
Trims are generally chosen to blend with the covering.
Step nosings frequently must contrast for visibility.
That is a safety requirement rather than a design preference.
